TURMERIC SPICED QUINOA

INGREDIENTS

  • 1 cup quinoa
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 1 cup frozen mixed veggies
  • 1 cup mushrooms, chopped
  • 2 cloves garlic, minced
  • 2 tsp cumin
  • 2 tsp ground turmeric
  • 2 cups water
  • 2 tbsp lemon juice
  • salt & pepper to taste

INSTRUCTIONS

Rinse quinoa, drain & set aside. 

In a large pan, heat oil, add onion, mushrooms & garlic, cook for about 2 min.

Add quinoa, mixed veggies, water, cumin, turmeric, salt & pepper.

Bring it to a boil. 

Cover, reduce heat & cook for about 15 minutes until all water is absorbed. 

Remove from heat. Add lemon juice. Stir well. Adjust seasoning to taste.
